Fast, Easy, Tasty, Satisfying, Healthful!

What more do we need in a lunch–or dinner for that matter?

Today’s lunch was so delicious I’m taking a moment to share it.

Ingredients:

1 bunch broccolini , roughly chopped (Trader Joe’s)

2/3 cup cubed tempeh*

2 organic sweet baby peppers, sliced thinly (on sale at Safeway now!)

2 Tablespoons olive oil

Sprinkle garlic powder

Sprinkle onion powder

Sea salt and pepper to taste

Few Tablespoons filtered water for steaming

Heat oil in skillet on medium high heat. Add the broccolini and stir fry until slightly soft but still crispy, about 4 minutes. Add tempeh cubes, peppers, garlic and onion powder, salt and pepper. Continue cooking for 3 minutes or so. Add a few tablespoons of water, turn heat to medium then cover and steam for two more minutes. Be sure the vegetables don’t get soggy.

*broccolinitempehTempeh is a traditional soy product that originated in Indonesia, and is made from whole soybeans which are bound into a cake-like form through a natural fermentation process.
