Fast, Easy, Tasty, Satisfying, Healthful!

What more do we need in a lunch–or dinner for that matter?

Today’s lunch was so delicious I’m taking a moment to share it.

1 bunch broccolini , roughly chopped (Trader Joe’s)

2/3 cup cubed tempeh*

2 organic sweet baby peppers, sliced thinly (on sale at Safeway now!)

2 Tablespoons olive oil

Sprinkle garlic powder

Sprinkle onion powder

Sea salt and pepper to taste

Few Tablespoons filtered water for steaming

Heat oil in skillet on medium high heat. Add the broccolini and stir fry until slightly soft but still crispy, about 4 minutes. Add tempeh cubes, peppers, garlic and onion powder, salt and pepper. Continue cooking for 3 minutes or so. Add a few tablespoons of water, turn heat to medium then cover and steam for two more minutes. Be sure the vegetables don’t get soggy.

That’s it. Hope you enjoy this super easy, super healthful lunch.

*broccolinitempehTempeh is a traditional soy product that originated in Indonesia, and is made from whole soybeans which are bound into a cake-like form through a natural fermentation process. It has an earthy flavor. Since tempeh retains the whole soybean when it’s made, it has a high content of protein, dietary fiber, and vitamins such as manganese and copper. In fact, it’s a complete protein food that contains all the essential amino acids.

Tempeh is full of healthy probiotics or “good bacteria” which you would typically associate with yogurt because it’s fermented. The enzymes produced by tempeh’s fermentation process help your body fight bad bacteria, better absorb important nutrients like iron, and aid in the digestive process. Not only does tempeh’s fermentation process produce natural antibiotic agents, but it leaves desirable soy isoflavones intact. Soy isoflavones have many health benefits such as strengthening bones, easing menopausal symptoms, and reducing risk of coronary heart disease and some cancers.
